Well, finally the third sister has decided to arrive. Yes, I'm the third and final sister to make her mark at this post. I'm Laura, a mother, wife, and first grade teacher living in Nebraska. I have been following Leslie's blog for a while now and it has inspired me to bake, cook and create new things, therefore when she asked me to contribute to the test nest I was excited to get started.
So, get started, we must. Let's begin with delicious BBQ Pulled Pork sandwiches. Here's the scenario: friends are coming for New Year's Day Dinner + very little time to prepare meal = slow cooked pulled pork sandwiches.
These sandwiches are so easy to make and they are delicious. My mom gave me this recipe and if you have a day to let it cook, you're in great shape. Here's how the whole process played out. Please disregard the rather unattractive meat shots (it's rather hard to make raw meat look good!)
To begin this process get yourself a nice (cheap!) pork roast (rump or shoulder). This is a rump, but I prefer the shoulder myself. Make sure the roast is 5 pounds or so. This was about 3 and a half pounds. Rinse the meat and pat it dry.
Next, get your spices ready: 3 Tablespoons paprika, 2 Tablespoons minced garlic, 1 Tablespoon brown sugar y'all, 1 Tablespoon ground mustard, and 3 Tablespoons salt. That's it! Can you believe that? You probably have that in your spice rack right now.
When your roast is rubbed seal it up in plastic
wrap and refrigerate it for at least 3 hours or
overnight. I always refrigerate mine overnight
because then you're ready to pop it in the oven
right away the next morning.
Now we're finally getting to the smell up the house in wonderful aromas part. Preheat the oven to 300 degrees and put the roast in for 6 hours or until your meat themometer reads 170 degrees at the thickest portion of the pork. After that, remove that beautiful piggy from the oven and let it rest for 10 minutes.
Once that meat has rested shred that pork up with two forks or get your hands dirty and tear it up. Then add your favorite BBQ sauce to the mix.
Get yourself a big ole' bun and pile it high with some delicious pulled pork! How easy is that!
BBQ Pulled Pork Sandwiches
3 T. Paprika
2 T. Minced Garlic
1 T. Packed Brown Sugar
1 T. Ground Mustard
3 T. Sea Salt
1 Pork Roast (shoulder or rump)
BBQ Sauce (whatever you like)
1. Stir together paprika, garlic, sugar, ground mustard and salt in a small bowl. Rub spice mixture all over the pork. Cover pork with plastic wrap. Refrigerate at least 3 hours. (Up to overnight)
2. Preheat oven to 300 degrees. Transfer pork to roasting pan. Roast until instant read thermometer reads 170 degrees (about 6 hours). Transfer pork to cutting board and let rest for 10 minutes.
3. Using two forks, shred warm pork into a bowl and add some BBQ sauce. Dish up onto a bun and eat up!
